This chicken salad is a huge hit in our house. I typically make a batch on Sunday, and we have it for lunch for several days. I substituted some of the mayonnaise that would normally be added to chicken salad with plain Greek yogurt to save fat and calories, and no one has even noticed–suckers! The combination of flavors in this dish is the final result of my years of experimenting with different combinations. The lime gives it a slight tart taste, the grapes give it some sweetness, and the walnuts and celery are the perfect amount of crunch.
I’ve always used the rotisserie chickens that are already made at the grocery store. I’ve mentioned several times that I love a good shortcut, and this is no exception. However, if your local grocery doesn’t have rotisserie chickens, you should immediately call them and file a complaint, and simply use boiled chicken for this recipe.
You can eat this plain with a good ole’ fork, or you can pair it with apple slices used as scoops for your chicken salad. Of course, you can use crackers or make this into a sandwich as well. It’s versatile enough for the kids to eat it too–Winner winner, chicken dinner! I know, I know…couldn’t resist. Give this a try and tell me if you like it!
CHILI LIME CHICKEN SALAD

Ingredients
◇ 1 rotisserie chicken from your local grocery store, (I prefer lemon pepper flavored, but original/plain works well too)
◇ 1/2 cup Chobani Greek yogurt, non-fat plain
◇ 1 bunch of red or green seedless grapes (the amount is based on your preference, eyeball it!)
◇ 1/2 cup celery, chopped
◇ 2 T chopped walnuts (if desired)
◇ 1 T Chili Lime seasoning (or to taste)
◇ zest from 1 lime
◇ juice from 1 lime
◇ 2 tsp Himalayan pink salt (or to taste)
TOOLS
◇ lime zester // you can use the small section of a cheese grater if you don’t have one
◇ citrus juicer // you can squeeze with your hands if you don’t have one

Remove skin from rotisserie chicken and pull the chicken breasts off of the breastbone.
I typically only use the breasts, but if you like darker meat, feel free to use any piece of that bird you like!

Shred the chicken and place into a large mixing bowl.
I shred the chicken by hand. Don’t overthink it.

Add the chopped celery, walnuts, lime zest, lime juice, Greek yogurt, avocado mayo, and salt to the mixing bowl.

Mix ingredients together until you reach the desired consistency for your chicken salad.

Gently fold the grapes into the salad.
